Sambal Lingkung, abon ikan khas kota Bangka.

Sambal lingkung yaitu salah satu lauk khas dari kota Bangka, di sebut lauk sebab biasanya sambal lingkung di makan dengan cara di aduk bersama nasi hangat tanpa adonan lauk atau sayuran yang lainnya. Biasanya sering di bawa oleh nenek dan ibu aku sebagai bekal ke "ume" atau ladang ( ketika ibu aku masih kecil dan sering membantu nenek di ladang, dia bercerita sambal lingkung menjadi lauk kuliner sehari-hari ).

Dan jangan pula di samakan dengan sambal pada umumnya hanya sebab di sebut sambal lingkung, sebab bahwasanya sambal lingkung sejenis atau masih satu keluarga dengan abon ikan. Yupz, sambal lingkung yaitu abon ikan yang bahwasanya cara membuatnya juga sangatlah sederhana dan tanpa cabe. Karena selain sayuran, cabai merupakan salah satu materi kuliner yang harganya benar-benar mahal di kota Bangka. Jadilah sambal lingkung sebagai lauk utama yang benar-benar mudah dan sanggup bertahan lama.

Resep yang aku bagikan berikut, merupakan resep sederhana sambal lingkung. Karena sambal lingkung biasanya menggunakan ikan yang di kukus terlebih dahulu kemudian hanya dagingnya saja yang di suwir dan di ambil untuk di buat sambal lingkung. Tetapi di resep ini, aku eksklusif menggunakan daging ikan giling. Rasanya tetap lezat meskipun teksturnya berbeda dibandingkan dengan menggunakan suwiran ikan.

Berikut materi & cara membuatnya

Bahan - materi :

  • 200 gram ikan giling
  • 1 buah kelapa muda, di parut
  • 10 butir cabe merah
  • 7 siung bawang merah
  • lima siung bawang putih
  • 3 lbr daun jeruk, di iris halus
  • 2 sendok makan gula merah ( optional )
  • 3 sendok teh gula pasir
  • 2 sendok makan air asam jawa
  • Garam Secukupnya
  • Minyak sayur secukupnya
  • Cara Membuatnya :

    1. Haluskan 10 butir cabe merah, 7 siung bawang merah dan lima siung bawang putih, sisihkan

    dua. Panaskan minyak sayur secukupnya di pada wajan buat menumis, sesudah panas tumis bumbu yg telah dihaluskan sampai harum

    tiga. Masukkan irisan daun jeruk beserta 2 sdm gula merah kemudian tambahkan 200 gram ikan giling, aduk rata hingga bumbu dan ikan tercampur rata

    4. Tambahkan 2 sendok makan air asam jawa beserta kelapa muda yang sudah di parut, aduk sampai rata

    5. Tambahkan 3 sendok teh gula pasir beserta garam secukupnya, aduk rata dan masak dengan api kecil sampai sambal lingkung benar-benar kering dan berwarna kecoklatan

    6. Setelah matang, angkat dan dinginkan. Setelah sahih-benar hirau taacuh sambal lingkung bisa pada simpan pada dalam wadah toples kedap udara & bisa bertahan selama beberapa hari

    Sambal Lingkung is one of the typical dishes of the city of Bangka, called side dish because usually Sambal lingkung eaten in a way in warm mix with the rice without side dish or the other vegetable mixture. Usually often taken by grandmother and my mother as a provision to "ume" or fields (when my mother was young and often help grandma in the fields, she told me that sambal lingkung became main dish that into the daily dish).

    I share the following recipe, a simple recipe Sambal lingkung. Because when making sambal lingkung usually wears steamed fish at first and then only meat are shreded and taken for a condiment made with sambal lingkung. But in this recipe, I immediately use minced fish meat. It was still tasty though the texture is different than using shredded fish.

    Here are the ingredients and how to make

    Ingredients :

  • 200 grams of minced fish
  • 1 young coconut, grated
  • 10 red chilies
  • 7 cloves of onions
  • 5 cloves garlic
  • tiga lime leaves, finely sliced
  • dua tablespoons brown sugar (optional)
  • tiga tsp sugar
  • 2 tablespoons tamarind water
  • Salt to taste
  • Vegetable oil to taste
  • How To Make :

    1. Puree 10 red chilies, 7 onions and 5 cloves garlic, set aside

    dua. Heat enough vegetable oil in a skillet for sauteing, after heat saute the spice paste until fragran

    3. Insert slices of lime leaves along with 2 tablespoons brown sugar and add 200 grams of minced fish, stir until fish seasonings well blended

    4. Add dua tablespoons tamarind water along with the coconut that has been grated, mix

    5. Add tiga tsp sugar along with salt to taste, stir and cook over low heat until the sauce with the environment is completely dry and brown

    6. Once cooked, remove and let cool. After a really cold sambal lingkung can be stored in an airtight container jar and can last for several days.
