Resep Kuliner Nasi Rames Khas Jawa

Foodies, nasi rames biasanya terdiri dari nasi putih dengan lauk pauk yang beraneka ragam & identik dengan lauk sederhana khas rumahan, nasi rames itu tiap tempat punya ciri khasnya masing-masing. Yang bakal kita ulik kali ini yaitu nasi rames khas Jawa Timur. Ok, pribadi aja ni resepnya :

Bahan & bumbu :

1. Ayam bumbu rujak

Bahan-bahan :

- 500 gram ayam, potong 6

- 250 ml air

- 250 ml santan kental

- 5 sdm minyak goreng

Bumbu yang dihaluskan :

- 7 siung bawang merah

- 4 siung bawang putih

- 6 butir kemiri

- 7 buah cabe merah besar

- 3 buah asam Jawa

- ½ sdt terasi

Bumbu tambahan :

- 4 cm lengkuas, memarkan

- 2 batang serai, potong 3 cm, memarkan

- 3 lembar daun jeruk

- 2 lembar daun salam

- 1 sdm gula

- 1 sdt garam

2. Sambal goreng hati

Bahan-bahan :

- 250 gram hati sapi, rebus sampai matang, potong dadu

- 200 gram kentang, potong dadu, goreng matang (kering luar)

- 2 papan pete, belah 2

- 5 cm lengkuas, memarkan

- 250 ml air

- 3 lembar daun salam

- 3 buah cabe merah besar, iris tipis, goreng kering

- 5 sdm minyak goreng

Bumbu yang dihaluskan :

- 7 siung bawang merah

- 5 siung bawang putih

- 6 buah cabe merah besar

- 5 buah cabe rawit

- 3 buah asam Jawa

- 3 sdt gula pasir

- 1,5 sdt garam

3. Oseng buncis

Bahan-bahan :

- 150 gram buncis, potong 2 cm

- 100 gram wortel, potong dadu

- 100 gram daging sapi

- 3 buah cabe hijau besar, iris 2 cm

- 3 buah cabe merah, iris 2 cm

- 400 ml air

- 5 sdm minyak goreng

Bumbu-bumbu :

- 5 siung bawang putih, iris

- 7 siung bawang merah, iris

- 1 buah tomat, potong

- 4 cm lengkuas, iris tpis

- 2 lembar daun salam

- 2 lembar daun jeruk

- 1 sdm kecap manis

- 1 sdm gula pasir

- 1,5 sdt garam

4. Acar kuning

Bahan-bahan :

- 100 gram wortel, iris korek api

- 150 gram mentimun, potong panjang 3 cm

- 5 siung bawang merah, belah 4

- 20 buah cabe rawit

- 1 sdm cuka

- 100 ml air

- 5 sdm minyak goreng

Bumbu yang dihaluskan :

- 4 siung bawang putih

- 5 butir kemiri

- 2 cm jahe

- 4cm kunyit

Bumbu tambahan :

- 2 batang serai, potong 3 cm, memarkan

- 3 lembar daun jeruk

- 1 sdm gula pasir

- ½ sdt garam

5. Sambal terasi

- 2 buah cabe merah besar, iris 2 cm

- 7 buah cabe rawit, belah 2

- 1 buah tomat masak ukuran sedang, belah 4

- 1 buah jeruk limau, belah 4

- 1 sdt terasi matang

- ¼ sdt garam

- ½ sdt gula pasir

Cara menciptakan :

1. Ayam bumbu rujak

- tumis bumbu halus, lengkuas & serai sampai harum

- masukkan ayam, aduk sampai ayam kaku

- tambahkan air, santan & bumbu tambahan lainnya, masak sampai bumbu meresap & kuah mengental, angkat

2. Sambal goreng hati

- tumis bumbu halus & lengkuas sampai harum

- masukkan hati & kentang, tambahkan air & daun salam, aduk rata

- sesaat sebelum diangkat, masukkan pete, masak sampai layu

- sajikan dengan taburan irisan cabe merah goreng

3. Oseng buncis

- rebus daging sampai matang, potong dadu

- rebus lagi sampai daging empuk, sisakan kaldu 100 ml (untuk kuah sayur)

- tumis bawang putih & bawang merah sampai harum, masukkan buncis, wortel & daging

- tambahkan kaldu & bumbu lain, aduk rata, masak sampai materi layu

- sesaat sebelum diangkat, taburkan cabe hijau & cabe merah, aduk rata, masak sampai matang

4. Acar kuning

- tumis bumbu halus sampai harum, masukkan serai, daun jeruk & wortel, aduk rata

- tambahkan air, garam & gula

- masak sampai mendidih & wortel layu

- masukkan materi lainnya, aduk rata, masak sampai mentimun hampir layu

5. Sambal terasi

- goreng semua materi (kecuali jeruk limau), haluskan, aduk rata

- peras jeruk limau di atas sambal, letakkan kulit jeruk di atasnya
