Resep Membuat Bika Ambon Khas Medan

Meski namanya Bika Ambon (nama Ibu kota Propinsi Maluku "Ambondanquot;), namun kudapan manis ini ternyata adalah jajanan Khas Kota Medan Sumatera Utara. Rasanya yang legit dan empuk, kue ini mempunyai rongga misalnya satang semut. Penasaran bagaimana cara membuatnya ?, yuk simak resep Bika Ambon berikut adalah.

RESEP BIKA AMBON KHAS MEDAN

Bahan Biang:

  • 125 gram Air
  • 11 gram Ragi instan
  • 50 gram Terigu Segitiga Biru
Cara Membuat:

  1. Campur semua bahan, aduk rata.
  2. Istirahatkan 15 menit.
Bahan Santan:

  • 1 butir Kelapa tua parut
  • 300 gram Air
  • 8 lbr Daun Jeruk
  • 2 gram Garam
  • 1 ruas Kunyit
  • 320 gram Gula pasir
Cara Membuat:

  1. Campur kelapa parut dengan air, remas-remas, peras, dan saring. (santan)
  2. Masak santan, daun jeruk, garam, dan kunyit dengan api kecil sampai kental (sambil di aduk-aduk; jangan sampai pecah).
  3. Matikan api, masukkan gula, aduk sampai gula larut.
  4. Biarkan dingin
Bahan Utama:

  • 7 butir Telur, kocok sampai rata
  • 4 butir Kuning telur, kocok rata
  • 225 gram Tepung sagu
  • 25 gram Tepung ketan
Cara Membuat Bika Ambon Khas Medan:

  1. Masukkan telur dan kuning telur ke dalam biang. Aduk dengan whisk (alat untuk mengaduk adonn kue) sampai rata.
  2. Masukkan santan sambil disaring. Aduk rata.
  3. Masukkan tepung sagu dan tepung ketan. Aduk rata.
  4. Tutup dengan plastik. Istirahatkan selama 3 jam. Buka tutup dan aduk adonan hingga buihnya hilang.
  5. Panaskan cetakan bika ambon. Tuangkan adonan sampai tiga per empat cetakan. Sebelum cetakan ditutup biarkan dulu hingga adonan berpori, baru kemudian cetakan ditutup.
  6. Biarkan sampai matang + 5 menit.
  7. Segera keluarkan dari cetakan dan sajikan selagi hangat.
