Resep Mie Korea Dak Kalguksu ( Korean Chicken Noodle Soup )

Dak kalguksu adalah galat satu resep mie dari korea, cara mengolahnya tidak memerlukan waktu yg lama . Kita berguru sejarah dulu ya ibu :D... Maksudnya sejarah resepnya hehehe...

Dak kalguksu memiliki 2 pengertian, yang pertama Dak ialah ayam dan Kalguksu artinya " mie pisau " yaitu mie yang dibuat menggunakan memotongnya hanya memakai pisau tanpa menggunakan indera menyerupai ampia.

Dak kalguksu merupakan hidangan demam berita panas bagi masyarakat korea, resep kalguksu sederhana hanya menggunakan irisan daun bawang & suwiran ayam. Namun sesuai menggunakan demam berita tanam rakyat korea seringkali menambahkan sayuran menyerupai kentang & zuchini kemudian ditambahkan kecap, bubuk cabai yang diberi minyak wijen.

Yang terkenal yaitu Dak Kalguksu ( Chicken Noodle Soup ) dan Haemul Kalguksu ( Seafood Noodle Soup ), dasar menciptakan kalguksunya sama hanya materi pada dasarnya yang berbeda. Sekarang aku gres menciptakan resep dak kalguksu yang sederhana ya bunda....

Ini foto Dak Kalguksu kuliner aku ibu... Maafkan jikalau fotonya tidak terlalu terperinci ya... Akan tetapi rasanya hmmmhhh jelas enaknya hehehe :D

Berikut materi & cara mengolahnya

Bahan Kalguksu :

  1. 500 gram tepung terigu
  2. 250 gram tepung sagu
  3. 2 sdt garam
  4. 3 sdm minyak sayur
  5. Air secukupnya

Bahan kuah dan tambahan :

  1. 1 bab dada ayam, bersihkan
  2. 2 buah bawang bombay, dipotong kasar
  3. 10 siung bawang putih
  4. Garam dan gula secukupnya
  5. Merica bubuk secukupnya
  6. 7 buah cabe merah
  7. Daun bawang, diiris tipis

Cara membuatnya :

  • Rebus 1 bab dada ayam yang sudah dibersihkan dengan air yang cukup banyak, masukkan 2 buah bawang bombay yang dipotong kasar, 10 siung bawang putih hingga dada ayam empuk dan matang ( jika ingin memakai kentang dan zuchini, potong-potong kentang dan zuchini kemudian masukkan juga di rebusan ayamnya )
  • Sementara itu buat materi Kalguksu nya : Campur 500 gram tepung terigu, 250 gram tepung sagu, 2 sdt garam, 3 sdm minyak sayur. Diaduk dan diuleni memakai tangan sambil diberi air bertahap hingga gabungan mie menjadi kalis. Setelah kalis bentuk gabungan menjadi bulat-bulat, taburi dengan sedikit tepung supaya tidak lengket kemudian pipihkan memakai rolling pin hingga ketebalan yang diinginkan. Lipat menjadi beberapa bab kemudian iris-iris gabungan mie memakai pisau, tambahkan tepung kembali supaya mie tidak lengket dan dapat dipisahkan.

Kira-kira begini cara menciptakan Kalguksunya... Maaf fotonya aku ambil menurut google yah, izin bunda bener-bener dapat lihat caranya :)

  •  Angkat dada ayam yang sudah matang kemudian suwir-suwir, ambil bawang putih yang sudah lunak taruh di wadah mangkok kemudian hancurkan hingga halus tambahkan minyak wijen / minyak sayur, tambahkan juga sedikit garam dan lada bubuk, masukkan suwiran ayam kemudian aduk hingga rata dan sisihkan
  • Giling halus 7 buah cabe merah kemudian tumis dengan sedikit minyak wijen / minyak sayur ( jika bunda mau dapat memakai cabe bubuk tambahkan dengan minyak wijen kemudian aduk rata )
  • Didihkan kembali air rebusan ayam tadi kemudian rebus mie kalguksu yang sudah jadi hingga matang, angkat dan taruh di mangkok saji
  • Hidangkan dengan pelengkapnya : suwiran ayam yang sudah dibumbui tadi, irisan daun bawang dan cabe halus sebagai sambalnya, boleh ditambahkan kecap dan ditaburi wijen sesuai selera

Sangat gampang kan bunda,, cocok untuk dijadikan santapan ketika kumpul bareng keluarga. Untuk Haemul kalguksu bunda dapat mengganti ayam dengan udang, cumi atau ikan. So, Enjoy Your Cooking Mom :D

Dak Kalguksu Recipe ( Korean Chicken Noodle Soup )

Ingredients of Kalguksu :

  • 500 grams of wheat flour
  • 250 grams of corn starch
  • 2 tsp salt
  • 3 tablespoons vegetable oil
  • enough water

Ingredients and complementary sauce :

  • 1 piece of chicken breast, wash
  • 2 pieces of onion, rough cut
  • 10 cloves of garlic
  • Salt and sugar to taste
  • Pepper powder to taste
  • 7 red chilies
  • Scallions, thinly sliced

How to make it :

  1. Boil 1 part chicken breast that had been cleaned with plenty of water, put 2 pieces of rough cut onions, 10 cloves of garlic until tender and cooked chicken breast ( if you want to use potatoes and zucchini, diced potatoes and zucchini first and also put in the chicken stew )
  2. Meanwhile we make Kalguksu : Mix 500 grams of flour, 250 grams of corn starch, 2 tsp salt, 3 tablespoons vegetable oil.
