Resep Pempek (Fish Dumpling With Stuffing Egg)

Awalnya membentuk pempek sendiri di tempat tinggal sempet menciptakan aku putus harapan bunda apalagi aku bukan dari berdasarkan kota palembang yg pungkasnya orang palembang asli pasti tangguh bikin pempek :D ... Dan juga masih pemula,,, kalau sekarang mungkin nir mengecewakan lah, minimal sudah pernah dapet orderan pempek berdasarkan sahabat-teman... Hehehehe :D

Kalau dulu edisi pempek yg keras alasannya adalah ialah kebanyakan sagu, rasa pempek yg benar-sahih asin, cuko yg sahih-sahih asam atau terlalu pedas sudah pernah pada lakoni semua :D

Tapi tetap gak mampu jauh berdasarkan masakan yang satu ini, soalnya suami suka sekali makan pempek meskipun bukan asli orang palembang. Makara mau nir mau nih wajib berjuang semoga bisa bikin pempek yg enak semoga gak seringkali jajan di luar :D, soalnya di setiap sudut kota palembang tuh poly toko bahkan kedai-kedai pempek menjamur yang harganya bervariasi deh.

Yang rasanya sedang harganya lumayanlah, mau yang benar-benar lezat sangat...Sangat menguras kantong mak -ibu heehee :)

Nah berdasar pengalaman jatuh berdiri tersebut, terciptalah pempek yg lezat meskipun belum mendapat predikat pempek yang sahih-sahih TOP tetapi hasil karya pempek ini sudah berhasil menerima orderan menurut beberapa teman-sahabat (Alhamdulillah... :D)

Makara resep ini mau saya sharing ke bunda-bunda sekalian semoga bisa merasakannya langsung :D

Ini dia pempek beserta cuko yg telah aku buat :D

Berikut materi dan cara mengolahnya

Bahan-bahan :

  • 1 kg daging ikan giling
  • 1200 gram tepung sagu
  • 300 gram tepung terigu
  • 2 sdm garam halus
  • 6 sdm minyak sayur
  • Air hangat secukupnya

Isian telur :

  • 8 butir telur ayam
  • 2 sdt garam halus
  • 1 sdm tepung terigu
  • 50 ml air biasa

Cara Membuatnya :

  1. Masukkan 300 gram tepung terigu ke dalam wadah yang agak besar, campur 2 sdm garam halus dan tuangkan air hangat bertahap sambil diaduk hingga menjadi bubur
  2. Tambahkan 6 sdm minyak sayur kemudian aduk rata
  3. Masukkan 1 kg daging ikan giling, aduk rata hingga adonannya tidak lembut lagi, sisihkan 400 gram tepung sagu di dalam wadah terpisah
  4. Tambahkan 800 gram tepung sagu bertahap dan aduk hingga tercampur rata
  5. Membuat isian telur : kocok lepas 8 butir telur ayam dicampur 2 sdt garam halus, 1 sdm tepung terigu dan 50 ml air biasa dan aduk hingga rata, sisihkan
  6. Siapkan air di dalam panci dan masak hingga mendidih kemudian kecilkan apinya
  7. Ambil memakai sendok sebanyak 30 gram gabungan ikan, kemudian lumuri bertahap dengan sagu
  8. Bentuk lingkaran kemudian pipihkan dan bentuk menyerupai mangkuk
  9. Isi dengan isian telur tetapi jangan hingga penuh, rapatkan bab atasnya dengan kedua jari sambil ditekan-tekan hingga benar-benar menutup sempurna
  10. Langsung masukkan pempek yang sudah jadi ke rebusan air yang mendidih, tunggu hingga beberapa dikala hingga pempek mengapung
  11. Angkat dan sajikan bersama cuko pempeknya

Untuk bikin pempek dengan isian telur menyerupai foto diatas memang agak sulit bund... Aku beberapa kali mencobanya... Jika terlalu usang di tangan maka telurnya akan merembes keluar & adakala pernah pempeknya pecah ketika direbus jadi semua isian telurnya mengapung.

Kalau bentuk lenjer kecil atau menyerupai bentuk balok mini , bunda tinggal membangun bundar lalu pipihkan secara memanjang sesuai selera yang diinginkan

Pempek Recipe (Fish Dumpling With Stuffing Egg)

Pempek is typical food city of Palembang, Indonesia. Indonesia people possible for this recipe are used in make by yourself at home and may become a favorite snack when gathering with family, but for those of you that living outside of Indonesia might be a little bit strange to taste. So I was a little bit hesitant to share the recipe. But I still want to share it with you, so I hope you like it: D

Make pempek easy to hard to say because if too many sagoo make pempek dough become hard, or too salty because too many salt, cuko it is too acidic or spicy.

I wanted to share the following recipe so you can make yourself at home and feel the taste of food on this one recipe.

Here are the ingredients and how to make it

Ingredients :

  • 1 kg of minced fish meat
  • 1200 grams of sagoo flour
  • 300 grams of wheat flour
  • 2 tablespoons fine salt
  • 6 tablespoons vegetable oil
  • Warm water

Stuffing eggs :

  • 8 chicken eggs
  • 2 tsp fine salt
  • 1 tbsp flour
  • 50 ml of plain water

How to Make it :

  1. Enter 300 grams of flour into a rather large container, mix 2 tablespoons of fine salt and pour the warm water gradually, stirring until it becomes mush
  2. Add 6 tablespoons vegetable oil and mix well
  3. Add 1 kg of minced fish meat and stir until the dough no longer tender
  4. Add 800 grams of sago flour little by little and stir until well blended, set aside 400 grams of sagoo flour in a separate container
  5. Make stuffing eggs: shake loose 8 chicken eggs mixed with 2 tsp fine salt, 1 tablespoon of flour and 50 ml of cold water and stir until smooth, set aside
  6. Prepare the water in the pot and cook until boiling then reduce the flame
  7. Take a spoon as much as 30 grams of fish batter, then coat gradually with sago
  8. Make a round shape then flat shape and make the shape like a bowl
  9. Fill with stuffing eggs but not to the full, close the top with a second finger-press while holding up really close completely
  10. Enter pempek that has been finished into boiling water, wait for a while until pempek float
  11. Remove and serve with cuko pempek

To make the stuffing pempek egg with a shape like the photo above is a bit difficult... I tried it a few times ... If it is too long in the hands of the eggs will seep out and sometimes pempek dough broken when boiled so all the stuffing eggs float.
