Resep Nasi Buk Khas Jawa

Foodies, kali ini kita bakal ngulik satu lagi salah satu makanan khas Jawa Timur, ialah nasi buk khas Madura Jawa Timur yang merupakan nasi campur khas Madura Jawa Timur. Katanya asal kata “Buk” sendiri biasa dilafalkan dengan “Bok” yang berarti “Bu”, mungkin sebab sering dijajakan oleh kaum hawa sehingga disebut dengan isitilah menyerupai itu. Nasi buk khas Madura Jawa Timur sendiri umumnya terdiri dari nasi putih & aneka lauk pendampingnya Buat foodies yang kepo sama nasi buk khas Madura Jawa Timur ini, dapat eksklusif nyoba sanksi resepnya berikut ini :

Bahan & bumbu :

1. Lodeh rebung

Bahan-bahan :

- 100 gram daging tetelan, potong kecil

- 300 ml air

- 400 gram rebung, rebus, iris

- 1 papan pete belah 2

- 10 buah cabe rawit

- 300 ml air

- 250 ml santan kental dari 300 gram kelapa parut

- 5 sdm minyak goreng

Bumbu yang dihaluskan :

- 4 siung bawang putih

- 7 siung bawang merah

- 1 sdm ketumbar

- 2 cm kencur

- 2 cm kunyit

- 2 buah cabe merah besar

- 4 butir kemiri

- ½ sdt terasi

Bumbu perhiasan :

- 2 lembar daun salam

- 4 cm lengkuas, memarkan

- ½ sdm gula pasir

- 1 sdt garam

2. Dendeng ragi

Bahan-bahan :

- 150 gram dendeng sapi, potong lebar

- 200 gram kelapa setengah tua, parut memanjang

- 2 lembar daun salam

- 400 ml air dingin

- 3 sdm minyak goreng

Bumbu yang dihaluskan :

- 5 siung bawang merah

- 3 siung bawang putih

- ½ sdt ketumbar

- 1 sdt lengkuas, parut

- 2 cm kunyit

- 1 buah cabe merah

- 2 buah asam Jawa, cairkan dengan 3 sdm air, remas, saring

- 2 sdt gula Jawa, serut

- 1 sdt garam

3. Empal goreng

Bahan-bahan :

- 400 gram daging gandik, potong 5 bagian, melintang berlawanan serat

- 700 ml air

- 400 ml minyak goreng

Bumbu yang dihaluskan :

- 5 siung bawang putih

- 1 sdm ketumbar

- 1 sdt gula Jawa, serut

- 3 buah asam Jawa

- 2 sdt garam

4. Kerupuk paru

Bahan-bahan :

- 250 gram paru sapi

- 200 gram nasi putih panas, haluskan

- 700 ml air

- 500 ml minyak goreng

Bumbu yang dihaluskan :

- 4 siung bawang putih

- ½ sdm ketumbar

- 1 sdt garam

Cara menciptakan :

1. Lodeh rebung

- rebus tetelan hingga empuk

- tumis bumbu halus hingga harum, masukkan rebung, pete, cabe rawit & bumbu pelengkap, aduk rata

- tuang tumisan ke rebusan daging, aduk, tuang santan, aduk & masak hingga mendidih

2. Dendeng ragi

- rendam dendeng dalam air hirau taacuh 2 menit, tiriskan, goreng hingga matang

- campur kelapa dengan bumbu halus, aduk rata, panaskan minyak

- masukkan gabungan kelapa berbumbu & daun salam, sangrai hingga hampir matang

- masukkan dendeng goreng, sangrai terus hingga kering

3. Empal goreng

- rebus daging diatas api sedang

- masukkan bumbu, masak hingga daging empuk & bumbu meresap

- angkat, pukul beberapa kali, tetapi jangan hingga hancur

- goreng daging di atas api sedang hingga kecokelatan

- angkat & sajikan

4. Kerupuk paru

- rebus paru bersama bumbu, masak hingga air habis, paru menjadi empuk & bumbu meresap, tiriskan

- ris tipis paru, lapisi kedua sisinya dengan nasi panas, goreng di atas api sedang hingga kering.

Nah foodies, tu tadi caranya, mungkin memang terlihat agak repot menciptakan nasi campur khas Madura Jawa Timur ini sebab mempunyai banyak aneka lauk.
