Memasak sedap menggunakan ikan tongkol

Resep ini salah satu resep khas kota Padang, biasanya ikan tongkol sangat cocok untuk dimasak asam padeh. Sangat mayoritas dengan rasa pedas, alasannya biasanya kuliner yang berasal dari kota padang sangat khas dengan rasa pedasnya. Contohnya saja Rendang, keripik balado, dan lain sebagainya.

Karena bosan dengan hidangan ikan tongkol yang biasanya hanya digoreng, kali ini aku ingin memasak dengan cara di asam padeh. Sekilas seakan-akan dengan resep pindang dan lempah kuning dari bangka. Tetapi kuah asam padeh lebih kental, asam, manis, asin, gurih dengan rasa pedas yang benar-benar terasa berpengaruh di lidah.

Tidak butuh waktu lama, hidangan asam padeh di santap habis. Karena rasa pedasnya yang sangat menggugah selera dan membangkitkan nafsu makan. Pokoknya mantap deh. Meskipun aku belum mengetahui resep aslinya asam padeh, tetapi resep berikut ini cukup mewakili cita-cita aku untuk merasakan pindang asam padeh.

Berikut materi dan cara mengolahnya

Bahan - materi :

  • 2 kg ikan tongkol
  • 100 gr cabe merah
  • 7 butir bawang merah
  • 4 buah bawang putih
  • dua ruas jahe
  • 1 ruas kunyit
  • 3 batang serai
  • 1 ruas lengkuas
  • 4 lbr daun salam
  • tiga lembar daun kunyit
  • tiga sdt garam halus
  • 2 sdt gula pasir
  • 1 sendok makan asam jawa
  • Air secukupnya
  • Air jeruk nipis secukupnya
  • Cara Membuatnya :

    1. Cuci bersih 2 kg ikan tongkol, potong-potong kemudian lumuri menggunakan air jeruk nipis dan pisahkan

    2. Haluskan 100 gr cabe merah, 7 butir bawang merah, 4 buah bawang putih, 1 ruas kunyit dan dua ruas jahe

    tiga. Memarkan 1 ruas lengkuas & tiga btg serai, pisahkan

    4. Didihkan air secukupnya pada pada panci, tambahkan bahan-bahan yg sudah di haluskan

    5. Tambahkan 3 batang serai yang dimemarkan, 1 ruas lengkuas, 4 lbr daun salam, tiga lembar daun kunyit serta tunggu beberapa dikala sampai mendidih

    6. Masukkan ikan tongkol yang sudah di bersihkan, tunggu sampai mendidih

    7. Remas 1 sendok makan asam jawa dengan air secukupnya kemudian tuang air asam jawa ke dalam rebusan ikan tongkol

    8. Setelah mendidih, masukkan tiga sendok teh garam, 2 sendok teh gula pasir lalu aduk hingga homogen

    9. Setelah ikan benar-sahih matang, angkat & sajikan

    Hmmm... rasa yang pedas bercampur dengan manis, asin, gurih sangat pas ketika di santap bersama nasi hangat.     Ingredients :

  • dua kg tuna
  • 100 grams of red pepper
  • 7 red onions
  • 4 cloves garlic
  • dua vertebra ginger
  • 1 vertebra turmeric
  • tiga lemongrass
  • 1 vertebra galangal
  • 4 bay leaves
  • tiga turmeric leaves
  • tiga tsp fine salt
  • dua tsp sugar
  • 1 tbsp tamarind
  • Enough water
  • The lime juice to taste
  • How to Make it:

    1. Wash 2 kg of tuna, cut into pieces and coat with lemon juice and set aside

    2. Blend 100 grams of red pepper, 7 red onions, 4 cloves of garlic, 1 vertebra of turmeric and 2 vertebra of ginger
