Resep Opor Ayam Tradisional - Traditional Recipe Chicken Curry

Saat lebaran datang, memang opor ayam menjadi primadona di tempat tinggal ya mak ... Biasanya sih dihidangkan bersama pasangan abadinya yakni ketupat atau lontong :D

Sama menyerupai di keluarga aku bunda, awalnya aku sering bertugas menggiling bumbu-bumbu untuk opor dan rendang untuk ibu aku ( ibu aku paling nggak suka membeli bumbu giling atau bumbu instan di pasar, ia lebih suka meracik dan menggiling bumbu-bumbu sendiri... jadi deh aku 'Tukang Gilingnya' hehehhe...:D )

Ini sudah jadi rutinitas pada ketika lebaran tiba, Nah... sudah menikah kebiasaan itu berlanjut dan menurun pada saya. Saya jadi lebih suka meracik dan menggiling bumbu sendiri ( cuma jikalau lagi tiba sindrom " Malas "... mau nggak mau keluar senjata cadangan " bumbu instan "... tapi rasanya tetep ahli bumbu racikan sendiri :D )

Tapi permanen aku jua pernah menggunakan bumbu instan opor menyerupai Indofood, bamboo atau mamasuka. Kalau nggak terdesak saya tetep pilih bumbu opor gilingan sendiri, soalnya punya rasa yang spesial rumahan :D

Berikut aku sharing resepnya ya bund...

Bahan dan cara mengolahnya :

Bahan :

  • 1 kg ayam atau 1 ekor ayam utuh
  • 1 buah kelapa, diparut kemudian diambil santan kentalnya
  • 2 buah serai, dikeprak
  • 3 lembar daun salam
  • 1 ruas lengkuas / laos, dikeprak
  • 3 lembar daun jeruk

Bumbu :

  • 10 siung bawang merah
  • 5 siung bawang putih
  • 5 cm jahe
  • 1 sendok makan ketumbar
  • 1/5 sdt merica bulat
  • 10 butir jinten
  • 1 cm kunyit ( boleh tidak digunakan jikalau bunda mau opornya tidak berwarna kekuningan )
  • 1 sdt kayumanis debu / 2 batang kayumanis
  • garam secukupnya
  • 3 sdm minyak goreng untuk menumis

Cara Membuatnya :

  1. Bersihkan 1 kg ayam, basuh dan potong menjadi 5 atau 8 bab atau lebih ( sesuai selera )
  2. Haluskan 10 butir jinten, 1 sdm ketumbar, 1/5 sdt merica bulat, 5 cm jahe, 1 cm kunyit, 10 siung bawang merah, dan 5 siung bawang putih bersama garam secukupnya
  3. Panaskan wajan, tuang 3 sdm minyak goreng kemudian tumis bumbu-bumbu yang sudah dihaluskan
  4. Masukkan 2 buah serai yang dikeprak, 3 lembar daun salam, 1 ruas lengkuas dan 1 sdt kayumanis debu ( soalnya aku punya stok kayumanis debu di rumah, boleh jikalau bunda mau pakai kayumanis berupa batang... sesuai selera ya bunda )
  5. Setelah bumbu yang ditumis harum, masukkan ayam kemudian aduk rata
  6. Setelah rata, masukkan santan bertahap dan tunggu sampai mendidih sambil terus diaduk
  7. Tambahkan garam dan gula ( sesuai selera )
  8. Setelah ayam matang, angkat dan hidangkan dengan lontong atau ketupat lebaran

Ternyata nggak terlalu rumit kan bunda cara memasaknya... bunda dapat mencobanya di rumah dengan bahan-bahan yang ada di rumah. So, Enjoy Your Cooking Mom :D

Opor Ayam Recipe ( Chicken Curry )

Ingredient :

  1. 1 kg of chicken or 1 whole chicken
  2. 1 piece of coconut or 1250 ml coconut milk
  3. 2 pieces of lemongrass, crushed in
  4. 3 bay leaves
  5. 1 piece galangal or laos, in crushed
  6. 3 lime leaves

Seasoning :

  1. 10 cloves little onions
  2. 5 cloves of garlic
  3. 5 cm ginger
  4. 1 tablespoon coriander
  5. 1 tsp pepper
  6. 10 grains of cumin
  7. 1 cm turmeric ( you should not be used it, if you does not want Opor yellowish)
  8. 1 teaspoon of cinnamon powder or 2 sticks of cinnamon
  9. salt to taste
  10. 3 tablespoons cooking oil for sauteing

How to Make it :

  • Clean 1 kg chicken, washed and cut into 5 or 8 parts ( according to taste )
  • Puree 10 grains of cumin, 1 tbsp coriander, 1 teaspoon pepper, ginger 5 cm, 1 cm turmeric, 10 cloves little onions and 5 cloves of garlic along with salt to taste
  • Heat the pan, pour 3 tablespoons cooking oil and stir-fry spices paste
  • Enter the two pieces are in the crushed lemongrass, 3 bay leaves, 3 lime leaves, 1 bulb of galangal and 1 teaspoon cinnamon powder or 2 sticks of cinnamon
  • After seasoning the pan-fried fragrant, put chicken and mix well
  • After wrapping, put coconut milk little by little and wait for it to boil, stirring constantly
  • Add salt and sugar to taste
  • Once the chicken is cooked and sauce has thickened, remove from heat and serve.

This chicken curry is a traditional dish that must exist when the feast arrived. This dish is usually served with rice, ketupat, lemang, or rice cake.
