Resep Pindang Daging Daun Kedondong (Beef Stew With Kedondong Leaves)

Kalau daging yang dimasak rendang atau kari mungkin telah biasa ya mak ?? Ditambah lagi pada waktu lebaran tiba, hidangan kuliner dirumah penuh dengan masakan berbau santan-santanan mulai berdasarkan opor ayam, lontong sayur, rendang atau kari daging, & masih poly lagi.

Nah... kini aku kepingin kuliner yang rasanya asem-asem seger, biar seimbang sama yang santan-santan bund... ( Kalau lihat kuliner yang bersantan, matanya jadi 'pusing-pusing' :D )

Bahan & cara mengolahnya :

Bahan :

  • 1 kg daging sapi
  • 1 buah nanas ukuran kecil, diparut
  • 10 buah cabe merah besar
  • 7 siung bawang merah
  • 3 siung bawang putih ukuran besar
  • 2 cm kunyit
  • 2 cm jahe
  • 1 bungkus terasi ABC ( sesuai brand yang bunda pakai )
  • 1 ruas lengkuas, dimemarkan
  • 2 buah serai, dimemarkan
  • 4 lembar daun salam
  • 4-5 buah asam kandis ( sesuai selera bunda )
  • 1 genggam daun kedondong muda ( bagi bunda yang kurang suka, materi yang satu ini boleh tidak dipakai... jadi judulnya cuma " Pindang Daging " saja. tapi lebih enaknya digunakan bund, rasanya lebih mantap dan semoga nyari daunnya juga nggak susah ya )
  • Garam dan gula secukupnya

Cara membangun :

  • Bersihkan, basuh dan potong-potong daging sapi sesuai selera, biar daging lebih cepat lembut ketika diolah Caranya Dengan : Parut 1 buah nanas ukuran kecil kemudian balurkan secara merata pada daging yang sudah dipotong-potong selama 10 menit, ketika mau direbus basuh lagi daging terlebih dahulu untuk menghilangkan parutan nanasnya
  • Setelah bersih, rebus daging di air secukupnya ( buang busa-busa yang timbul di atas air rebusan daging supaya air pindangnya terlihat jernih )
  • Sementara itu, haluskan 2 cm kunyit, 2 cm jahe,10 buah cabe merah besar, 7 siung bawang merah, 3 siung bawang putih dan 1 bungkus terasi ABC dengan garam secukupnya
  • Setelah air rebusan daging mendidih dan daging setengah empuk, masukkan bumbu-bumbu yang dihaluskan bersama 1 ruas lengkuas yang dimemarkan, 2 buah serai yang dimemarkan, 4 lembar daun salam, 4-5 buah asam kandis, biarkan meresap sebentar
  • Tambahkan garam, gula secukupnya ( dicicip jika perlu ) dan 1 genggam daun kedondong muda
  • Setelah mendidih, Angkat dan hidangkan

Makara hari ini nggak ada rendang daging ya ibu :D..., adanya pindang daging daun kedondong... Rasanya ??? Hmm,, jangan ditanya... Dagingnya empuk dan lezat , makannya dibarengi asem dari daun kedondongnya, pedes dan gurih.

Beef Stew With Kedondong Leaves

Ingredients :

  • 1 kg of beef
