Resep Pai Pisang Srikaya ( Banana Pie With Srikaya Cream Recipe )

Sudah usang kepingin bikin resep makanan ringan anggun pai, terutama pai apel. Namun kali ini aku mau sharing resep pai pisang srikaya, Dikarenakan bahan-bahannya gampang didapat, murah harganya dan pula nggak perlu pakai mikser... Soalnya lagi kena sindrom " Malas Mikser " hehehehe :D

Resep ini terinspirasi selesainya nonton video di youtube tentang pai, namun pada resep kali ini terdapat bedanya ibu... Yaitu aku memakai krim srikaya. Kalau yg aslinya sih gunakan susu cair, sebab yaitu modifikasinya menggunakan tema murah meriah jadilah krim srikaya.

Setelah dicoba memang nggak nyesel, rasa krim srikaya cocok dipadu menggunakan pisang. Dan pai ini cocok untuk dijadikan hantaran kerumah orang tua, mertua atau saudara di hari lebaran. Simak cara mengolahnya yuk bunda... Selamat mencoba :D

Bahan Adonan Pai :

  • 600 gram tepung terigu
  • 300 gram mentega
  • 150 gram gula halus
  • 1 butir telur
  • 3 sdm air es

Bahan Krim Srikaya :

  • 3 gelas santan kental
  • 200 gram gula pasir
  • 4 butir kuning telur
  • 100 gram tepung terigu / tepung beras / maizena, larutkan dengan air
  • 1 sdt vanili
  • 2 gelas air
  • garam sejumput
  • Untuk isian : 2 sisir pisang raja

Cara Membuat :

  1. Campur dan ayak 600 gram tepung terigu dan 150 gram gula halus ke dalam wadah bejana yang besar dan buat lubang di tengahnya
  2. Tambahkan 300 gram mentega dan 1 butir telur ke tengah-tengah gabungan tepung dan gula, tekan-tekan mentega menggunakan garpu sambil sesekali diaduk dengan tepung sampai berbutir kasar
  3. Masukkan 3 sdm air es sedikit-sedikit kemudian aduk mengunakan tangan, kepal adonan ditangan ( jika adonan tersebut menggumpal dan tidak pecah artinya kulit pai sudah kalis dan siap diolah, kalau masih pecah tambahkan lagi air esnya )
  4. Setelah kalis masukkan adonan kulit pai kedalam kantong plastik higienis dan masukkan ke dalam lemari es selama 1 jam
  5. Sementara itu campur 3 gelas santan kental, 2 gelas air, 200 gram gula pasir, larutan tepung terigu, 4 butir kuning telur, 1 sdt vanili, dan garam sejumput. Masak sampai mengental dengan api sedang, angkat dan srikaya siap digunakan
  6. Setelah 1 jam, panaskan oven. Keluarkan adonan pai dari dalam kulkas kemudian gilas menggunakan gilingan kayu dengan ketebalan 1 cm atau lebih ( sesuai selera ), Taruh di loyang pai ( saya menggunakan loyang pai anti lengket, kalau loyang pai biasa bunda sanggup olesi mentega dan taburi merata dengan sedikit tepung dulu ) dan tekan-tekan sedikit. Tusuk- tusuk merata bab bawah adonan pai di dalam loyang menggunakan garpu
  7. Potong-potong pisang raja sesuai selera, kemudian tata di dalam loyang yang sudah ada kulit pai nya
  8. Siram dengan srikaya kemudian hias sesuai selera ( bisa dengan taburan kayumanis bubuk, keju, dan lain-lain )
  9. Oven selama lebih kurang 45 menit dengan suhu 150 derajat celcius untuk panggangan HOCK di kompor
  10. Setelah matang, angkat. Ada tipsnya untuk mengeluarkan pai dari dalam loyang : Dinginkan terlebih dahulu selama 2 jam-an di suhu ruang, kemudian masukkan lemari es. Jika ingin dimakan gres dikeluarkan dari dalam kulkas dan pai dengan gampang sanggup dilepas dari loyang dan di hidangkan di piring saji.

Banana Pie With Srikaya Cream Recipe

Pai Dough Ingredients :

  • 600 grams of wheat flour
  • 300 grams of butter
  • 150 grams of refined sugar
  • 1 egg
  • 3 tablespoons ice water

Srikaya Cream Ingredients :

  • 3 cups coconut milk
  • 200 grams of sugar
  • 4 egg yolks
  • 100 grams of flour / rice flour / cornstarch, dissolved in water
  • 1 tsp vanilla
  • 2 cups water
  • Pinch of salt

For the stuffing :

  • dua bunches of banana

How To Make :

  1. Mix and sift flour 600 grams and 150 grams of powdered sugar into a large bowl container and make a hole in the middle
  2. Add 300 grams of butter and 1 egg into the middle of the flour and sugar mixture, press out the butter with a fork while stirring occasionally with flour to coarse grained
  3. Enter the 3 tablespoons ice water and stir a little bit using a hand, fist batter hands (if the dough does not clot and rupture means pie crust already smooth and ready to be processed, if they rupture add more water ice)
  4. After dull enter the pie crust dough into a clean plastic bag and place in the refrigerator for 1 hour
  5. Meanwhile mix 3 cups coconut milk, 2 cups water, 200 grams of sugar, wheat flour solution, 4 egg yolks, 1 teaspoon vanilla, and a pinch of salt. Cook over medium heat until thickened, remove from heat and sugar apple is ready for use
  6. After 1 hour, preheat the oven.
